
During the week, I don’t want to spend any effort on breakfast. I typically grab a Nature’s Bakery fig bar or a Nature Valley Dark Chocolate Peanut & Almond Sweet and Salty Nut granola bar to go with my latte. A home baked breakfast always feels so much more special though.
I’m a baker, and when I bake something breakfast-y, I like to use it for breakfast over the next several days. These are easy breakfast recipes to bake for the week. I like to make them on Sunday and use them for my weekday breakfasts, along with a homemade iced latte, of course. I also recommend adding a piece of fruit to round out the meal.

This one might not last all week because it will be gobbled up so fast. There’s a layer of Nutella in the center that functions as a built-in schmear, and a layer on top that forms a brownie-like topping.

Because this granola isn’t oil based, it cooks a lot faster. And it’s fun to play with different versions of the ingredients. I love using peanut, almond, or cashew butter in place of the tahini. And any nut will do in place of the pistachios.

Sweet and Salty Chocolate Granola by Giada De Laurentiis
This granola is made with olive oil. It is absolutely divine! The chocolate is optional (but highly recommended).
