
During the week, I don’t want to spend any effort on breakfast. I typically grab a Nature’s Bakery fig bar or a Nature Valley Dark Chocolate Peanut & Almond Sweet and Salty Nut granola bar to go with my latte. A home baked breakfast always feels so much more special though.
I’m a baker, and when I bake something breakfast-y, I like to use it for breakfast over the next several days. These are easy breakfast recipes to bake for the week. I like to make them on Sunday and use them for my weekday breakfasts, along with a homemade iced latte, of course. I also recommend adding a piece of fruit to round out the meal.

Muffins, Quick Breads, and Scones
These are the perfect banana muffin. I’ve tried many.
These are such a fun spin on a classic banana muffin above. Who doesn’t love bananas and peanut butter?!
Just like the banana muffins above, I have tried a LOT of blueberry muffin recipes. This is the ONE.
Oatmeal Walnut Muffins
The addition of cooked oatmeal keeps these moist (in a good way).
This one might not last all week because it will be gobbled up so fast. There's a layer of Nutella in the center that functions as a built-in schmear, and a layer on top that forms a brownie-like topping.
So yum! So easy.
These are the easiest scones because you just mix in cream instead of working in butter. They are extra tender and delicious.
Oats
These Pumpkin Oatmeal Breakfast Cookies pack a nutritious punch with ingredients from all five food groups! They’re made with fruit (golden raisins), vegetables (pumpkin), grains (oats, flour), protein (flaxseeds), and dairy (butter).
P.S. While butter technically qualifies as a dairy product, it doesn’t count toward your daily recommended servings—so feel free to pair these cookies with a latte for a more well-rounded start to your day.
These are easy and nostalgic.
Tahini Pistachio Granola
Because this granola isn’t oil based, it cooks a lot faster. And it’s fun to play with different versions of the ingredients. I love using peanut, almond, or cashew butter in place of the tahini. And any nut will do in place of the pistachios. You can find this recipe in the Simply Genius cookbook.
Sweet and Salty Chocolate Granola
This granola is made with olive oil. It is absolutely divine! The chocolate is optional (but highly recommended).
Fancy/Indulgent
Yes, this is best straight out of the oven, but it‘s yummy later, too. And it’s a piece of cake compared to making actual croissants. Puff pastry to the rescue!
I typically make these for Easter and enjoy them all week. They’re great any time of year, though.
