One Pan Vegan Roasted Veggies with Pita & Hummus

This vegan one pan roasted veggies with pita and hummus is a quick and flavorful meal featuring broccoli, grape tomatoes, red onion, and lemon slices roasted to perfection. Served with warm pita and creamy hummus, it' a fuss-free, delicious dinner ready in about 30 minutes!

- 1 Bag Broccoli Florets
- 1 pint Grape Tomatoes whole
- 1 Red Onion peeled, and cut into wedges
- 1 Lemon thinly sliced
- 3 Tbs Olive Oil
- 1 tsp Kosher Salt
- Pepper
- 4 Pitas
- Hummus for serving
- Preheat the oven to 425°F with a rack in the lowest slot. Line a sheet pan with parchment paper. 
- Add broccoli, tomatoes, onions, and lemon slices to a sheet pan. Drizzle olive oil onto veggies, sprinkle with salt and pepper, and toss to coat. 
- Roast for 20-25 minutes until the bottoms of the veggies are caramelized and some tomatoes have popped. 
- During the last few minutes of roasting, toast the pita bread. 
- Serve the vegetables with pita and hummus.
