One Pan Vegan Roasted Veggies with Pita & Hummus

This vegan one pan roasted veggies with pita and hummus is a quick and flavorful meal featuring broccoli, grape tomatoes, red onion, and lemon slices roasted to perfection. Served with warm pita and creamy hummus, it' a fuss-free, delicious dinner ready in about 30 minutes!

- 1 Bag Broccoli Florets
- 1 pint Grape Tomatoes whole
- 1 Red Onion peeled, and cut into wedges
- 1 Lemon thinly sliced
- 3 Tbs Olive Oil
- 1 tsp Kosher Salt
- Pepper
- 4 Pitas
- Hummus for serving
Preheat the oven to 425°F with a rack in the lowest slot. Line a sheet pan with parchment paper.
Add broccoli, tomatoes, onions, and lemon slices to a sheet pan. Drizzle olive oil onto veggies, sprinkle with salt and pepper, and toss to coat.
Roast for 20-25 minutes until the bottoms of the veggies are caramelized and some tomatoes have popped.
During the last few minutes of roasting, toast the pita bread.
Serve the vegetables with pita and hummus.
